Chocolate Eclair

I am going to share the BEST dessert recipe ever!
It is a friend of mines mother's recipe that she shared with me,
and It is SOOOO easy... and SOOO delicious!

  • Box of Graham Crackers
  • 2 Boxes of French Vanilla Pudding
  • 1 Small Tub of Cool Whip
  • Chocolate Icing
  • Milk (to make the pudding)
Step 1: Make 1 Box of the French Vanilla Pudding according to direction on box.
Step 2: While pudding is getting thick, start icing your graham crackers.
             Just put a good amount of chocolate icing on your graham crackers and place them in the 
             bottom of a backing dish.
Step 3: Pour Pudding on top of Iced Graham Crackers. Spread it out evenly.
Step 4: Make the 2nd Box of pudding, adding the tub of cool whip to the mixture.
Step 5: Ice graham crackers and place them on top of the pudding.
Step 6: Pour your pudding/cool whip mixture on top of the iced graham crackers.
Step 7: Place more iced graham crackers on the top
Step 8: Put in fridge! Let it get real cold, and enjoy!!!

(pardon my after photo, the graham crackers should cover the entire top of eclair, but I ran out of Graham crackers... WHOOPS, so I had to improvise)

I have also made these in individual servings for parties! They were a HUGE hit! I just did graham crackers square (half a reg graham cracker) serving sizes, and put them in little cups.

Its so easy, there's not even any baking involved..
and it is SO good!
